INGREDIENTS
5 large egg whites (approx. 165g)
1 turkey sausage link (approx. 56g)
1 cup fresh spinach (30g)
1 quarter cup chopped red bell pepper (38g)
1 quarter cup diced tomato (45g)
1 oz part-skim mozzarella cheese (28g)
2 teaspoons olive oil (9g)
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium heat and add the olive oil.
Dice the turkey sausage into bite-size pieces. Add them to the skillet and sauté for 2-3 minutes until lightly browned.
Add the chopped red bell pepper and diced tomato to the skillet. Sauté for another 2 minutes until slightly softened.
Pour in the egg whites and add the fresh spinach. Season with salt and pepper to taste. Stir gently, allowing the spinach to wilt and the egg whites to cook evenly.
Once the eggs are nearly set, sprinkle the mozzarella cheese over the scramble and let it melt for about 1 minute.
Give the scramble a final stir, ensuring all ingredients are well combined, then remove from heat and serve immediately.
