A hearty hash featuring lean ground turkey and sweet potato cubes, brightened with red bell pepper, shallot, and garlic, lightly sautéed with kale for a nutrient-packed meal. The savory aroma and colorful presentation make this dish a satisfying option for breakfast, lunch, or dinner.
INGREDIENTS
5 oz Lean Ground Turkey
1 cup diced Sweet Potato
1 cup chopped Kale
1/2 cup diced Red Bell Pepper
1 medium diced Shallot
2 cloves minced Garlic
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat a large non-stick skillet over medium heat.
Add the lean ground turkey to the skillet and cook until browned, breaking it apart with a spatula as it cooks. Drain any excess liquid if necessary.
While the turkey browns, steam or microwave the diced sweet potato for 3-4 minutes until slightly tender.
Push the turkey to one side of the skillet and add the olive oil to the cleared space. Sauté the diced shallot, minced garlic, and red bell pepper for about 2 minutes until softened.
Add the steamed sweet potato cubes to the skillet, stirring them in with the aromatics. Season lightly with salt and pepper.
Fold in the chopped kale, allowing it to wilt into the hash. Mix all ingredients together and let them heat through for another 2-3 minutes.
Taste and adjust seasoning if needed, then serve warm.
