A vibrant and well-balanced dinner featuring perfectly seared salmon fillet paired with crisp steamed green beans and a creamy garlic-infused mashed cauliflower. This dish is both light and nourishing, delivering a satisfying blend of flavors and textures with every bite.
INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1.5 cups chopped Cauliflower
1 tsp Olive Oil
2 tbsp Nonfat Plain Greek Yogurt
1 Garlic Clove
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat the olive oil in a skillet over medium-high heat until shimmering.
Place the salmon in the skillet skin-side down (if applicable) and sear for about 3-4 minutes per side, until the exterior is golden and the fish is just cooked through.
While the salmon is searing, steam the green beans in a steamer basket over boiling water for about 4-5 minutes until they are tender yet crisp.
In a small pot, add the cauliflower and a little water, bring to a simmer, and cover. Cook for about 8-10 minutes until the cauliflower is fork-tender.
Drain the cauliflower and transfer it to a bowl. Add the garlic clove (minced) and nonfat Greek yogurt, then mash until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed green beans and a generous scoop of the garlic mashed cauliflower. Serve warm.
