INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower Florets
1 tsp Olive Oil
1 clove Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the salmon dry and season both sides with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat with a drizzle of olive oil. Once hot, place the salmon skin-side down and sear for about 3-4 minutes, then flip and cook for another 3-4 minutes until desired doneness is achieved.
While the salmon cooks, steam the green beans in a steamer basket over boiling water for about 5 minutes until tender yet crisp.
Meanwhile, boil or steam the cauliflower florets until very tender, about 8-10 minutes. Drain well and transfer to a bowl.
Add the garlic (minced or whole lightly crushed) and remaining teaspoon of olive oil to the cauliflower. Mash until smooth and creamy; season with a pinch of salt and pepper to taste.
Plate the seared salmon alongside the steamed green beans and a generous serving of garlic mashed cauliflower. Serve immediately.
