PREPARATION
Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Remove the spinach from the skillet and set aside.
In the same skillet, add the turkey bacon and cook until crispy on both sides, about 3-4 minutes per side. Once crispy, chop the bacon into bite-sized pieces and set aside.
