75g Feta Cheese
100g Cherry Tomatoes
100g Cucumber
30g Red Onion
30g Kalamata Olives
50g Mixed Greens
10g Fresh Herbs (Basil & Parsley)
1 tsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
Salt and Black Pepper to taste
PREPARATION
If not already cooked, grill the chicken breast until fully cooked and slice into strips.
In a large bowl, combine the mixed greens, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and pitted Kalamata olives.
Add crumbled feta cheese and roughly chopped fresh basil and parsley to the salad.
