INGREDIENTS
6 oz Salmon Fillet
5 Asparagus Spears
1 cup Cauliflower
1 tsp Olive Oil (for asparagus)
1 tsp Olive Oil (for mash)
PREPARATION
Preheat the oven to 425°F.
Place the asparagus spears on a baking sheet, drizzle with 1 tsp olive oil, and season with salt and pepper if desired.
Roast the asparagus in the oven for about 10-12 minutes until tender and slightly charred.
While the asparagus roasts, steam or boil the cauliflower florets until very tender, about 8-10 minutes.
Using a blender or immersion blender, blend the cauliflower with 1 tsp olive oil (and a pinch of salt and pepper) until smooth to create a creamy mash.
Season the salmon fillet with salt and pepper. Heat a non-stick skillet over medium-high heat and lightly oil the pan.
Place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until the salmon is cooked through.
Plate the salmon fillet alongside the roasted asparagus and a generous serving of cauliflower mash. Serve immediately.
