INGREDIENTS
4.5 oz Lean Ground Beef (95% lean)
80 g Potato (for baked fries)
1/4 cup Black Beans (canned, no added salt)
1/8 medium Avocado
1 cup Romaine Lettuce (shredded)
1/2 medium Tomato
2 tbsp Red Onion (sliced)
2 tbsp Salsa
1/2 tsp Olive Oil
Taco Seasoning (to taste)
PREPARATION
Preheat your oven to 425°F for the baked fries.
Wash the potato and cut it into thin fry shapes. Toss the potato fries with a light spray of non-stick spray (or 1/2 tsp olive oil) and a pinch of salt, then spread them evenly on a baking sheet.
Bake the potato fries for about 20-25 minutes, turning halfway through, until they become crispy and lightly golden.
While the fries are baking, heat a non-stick skillet over medium heat and add the 4.5 oz of lean ground beef along with the taco seasoning and the remaining 1/2 tsp olive oil. Cook, stirring often, until the beef is browned and cooked through.
Prepare the bowl by layering shredded romaine lettuce as the base.
Top with sliced tomato, thinly sliced red onion, black beans, and a drizzle of salsa.
Once the beef is done, add it on top of the veggies.
Garnish the bowl with diced avocado.
Serve with a side of crispy baked fries and enjoy your lean, flavorful taco bowl.
