INGREDIENTS
6 oz Salmon Fillet
1 cup Broccoli
1 cup Cauliflower
2 tbsp Nonfat Greek Yogurt
1/4 cup Unsweetened Almond Milk
2 tsp Olive Oil (divided)
2 cloves Garlic
Salt and Pepper
PREPARATION
Preheat your oven to 425°F.
Toss the broccoli florets with 1 teaspoon of olive oil, salt, and pepper. Spread on a baking sheet.
Roast the broccoli in the oven for about 15 minutes until tender and slightly charred at the edges.
Meanwhile, bring a pot of water to boil and steam the cauliflower florets until very soft, about 8-10 minutes.
In a small pan, heat the remaining olive oil over medium heat and lightly sauté the minced garlic until fragrant, then add to the steamed cauliflower.
Mash the cauliflower with the garlic, Greek yogurt, and almond milk until smooth and creamy. Season with salt and pepper to taste.
Season the salmon fillet with salt and pepper. Heat a non-stick skillet over medium-high heat and sear the salmon skin-side down for about 3-4 minutes until the skin is crispy.
Flip the salmon and cook for an additional 3-4 minutes until just cooked through.
Plate the salmon alongside the roasted broccoli and a generous scoop of garlic cauliflower mash. Serve immediately.
