PREPARATION
Preheat your oven to 425°F (220°C) for roasting the sweet potato.
Wash the sweet potato thoroughly and pierce it a few times with a fork. Rub it lightly with half of the olive oil.
Place the sweet potato on a baking sheet and roast in the oven for about 25-30 minutes, or until tender.
While the sweet potato is roasting, heat a non-stick skillet over medium heat. Add the turkey sausage links and cook until they are browned on all sides.
Remove the sausage from the skillet and set aside. In the same skillet, lightly sauté the spinach with a splash of water until just wilted.
Add the egg whites to the skillet with the spinach, stirring gently to scramble. Once the egg whites begin setting, chop the turkey sausage into bite-sized pieces and add them back into the pan.
Season the scramble with salt and pepper to taste. Stir until everything is well combined and the eggs are fully cooked.
