INGREDIENTS
6 ounces Lamb Shank
1 medium diced Carrot
1 diced Celery stalk
1/2 medium diced Onion
1 minced Garlic clove
1/2 cup Diced Tomatoes
1 cup Low-Sodium Lamb Broth
1 teaspoon Olive Oil
1 sprig Fresh Rosemary
Salt and Pepper to taste
PREPARATION
Heat a medium pot over medium-high heat and add the teaspoon of olive oil.
Season the lamb shank with salt and pepper. Sear the lamb shank on all sides until browned, about 2-3 minutes per side.
Remove the lamb shank and set it aside. In the same pot, add the diced onion, celery, and carrot. Sauté until they begin to soften, about 4-5 minutes, and add the minced garlic during the last minute.
Return the lamb shank to the pot and pour in the low-sodium lamb broth and diced tomatoes.
Add a sprig of fresh rosemary. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 1.5 to 2 hours, or until the lamb is tender and falling off the bone.
Adjust seasoning with salt and pepper to taste. Serve hot, and enjoy your hearty stew.
