INGREDIENTS
250g Extra Firm Tofu
1/2 cup Shelled Edamame (approx 80g)
1 cup Broccoli
1 tsp Sesame Oil
1 tsp Low Sodium Soy Sauce
1 tsp Sesame Seeds
2 cloves Garlic
PREPARATION
Preheat your oven to 400°F.
Press the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
In a bowl, gently toss the tofu cubes with the sesame oil and soy sauce. Sprinkle sesame seeds over the tofu for added crunch.
Spread the tofu on a baking sheet lined with parchment paper and bake for 20-25 minutes, flipping halfway through, until edges are crispy.
Meanwhile, chop the broccoli into florets and toss with minced garlic (from 2 cloves) and a light drizzle of sesame oil. Season lightly if desired.
Place the broccoli on a separate baking tray and roast in the oven for about 15-20 minutes until tender and slightly charred.
In the last 5 minutes of roasting, add the shelled edamame to the broccoli tray to warm through.
Once both the tofu and broccoli with edamame are roasted, plate them together. Optionally, drizzle a tiny extra bit of low sodium soy sauce for added flavor.
Serve warm and enjoy your balanced, crispy sesame tofu with roasted garlic broccoli.
