INGREDIENTS
200g Firm Tofu
1 cup Shelled Edamame
1 cup Broccoli
1 medium Red Bell Pepper
1 medium Carrot
2 cloves Garlic
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Soy Sauce
PREPARATION
Press the tofu to remove excess moisture and cut it into 1-inch cubes.
Prepare the vegetables by chopping broccoli into florets, slicing the red bell pepper into strips, and cutting the carrot into thin matchsticks. Mince the garlic.
Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the minced garlic and stir-fry for about 30 seconds until fragrant.
Add the tofu cubes to the skillet, allowing them to sear and become slightly crispy on all sides, approximately 5-7 minutes.
Stir in the broccoli, red bell pepper, carrot, and shelled edamame. Continue stir-frying for another 3-4 minutes until the vegetables are crisp-tender.
Drizzle the soy sauce over the mixture and toss to evenly coat all ingredients.
Finish by sprinkling toasted sesame seeds over the stir-fry. Serve hot.
