INGREDIENTS
7.5 oz Salmon Fillet
0.75 tsp Olive Oil
1 cup Asparagus
1 cup Cauliflower
3 Tbsp Plain Nonfat Greek Yogurt
1 Tbsp Lemon Juice
1 Garlic clove
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 0.75 tsp of olive oil.
Sear the salmon fillet skin-side down first for about 3-4 minutes, then flip and cook for another 3-4 minutes until just cooked through.
Meanwhile, steam the asparagus in a steamer basket over boiling water until tender and bright green, about 4-5 minutes.
For the cauliflower mash, steam the cauliflower florets until soft, about 8-10 minutes. Transfer to a blender or use a potato masher to combine with Greek yogurt, lemon juice, a crushed garlic clove, and a pinch of salt and pepper. Blend or mash until smooth and creamy.
Plate the seared salmon alongside the steamed asparagus and a serving of cauliflower mash. Garnish with a drizzle of lemon juice or a light sprinkle of extra pepper if desired.
