4 oz Chicken Breast
100g Cauliflower Gnocchi
100g Mixed Vegetables (Spinach, Cherry Tomatoes, Zucchini)
1 tbsp Pesto Sauce
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the chicken breast dry, and season generously with salt and pepper.
Heat 1 teaspoon of olive oil in a medium skillet over medium-high heat.
Sear the chicken breast for about 4-5 minutes per side until golden and cooked through. Remove and let rest.
In the same skillet, add the cauliflower gnocchi and sauté for 4-5 minutes until they become crispy and lightly browned.
Add the mixed vegetables to the skillet and sauté for another 2-3 minutes until slightly tender but still vibrant.
Reduce the heat to low and stir in 1 tablespoon of pesto sauce to evenly coat the vegetables and gnocchi.
