1 medium bell pepper
3 oz lean ground turkey
1 oz lean Italian sausage
1/4 cup low-fat shredded cheese
1/4 medium onion, diced
1/4 cup diced tomato
1 tsp olive oil
1/2 tsp dried Italian seasoning
Salt and pepper to taste
PREPARATION
Preheat your oven to 375°F.
Slice the top off of the bell pepper and remove the seeds and membranes. Set aside the pepper and chop the removed pieces finely.
Heat olive oil in a non-stick skillet over medium heat. Add diced onion and chopped bell pepper pieces, sauté until softened, about 3-4 minutes.
Add lean ground turkey and Italian sausage to the skillet. Break the meat apart and cook until browned, about 5-6 minutes. Stir in the diced tomato and Italian seasoning, and season with salt and pepper.
Once the mixture is cooked through, remove from heat and stir in half of the shredded cheese.
Stuff the bell pepper with the meat and cheese mixture, then top with the remaining cheese.
Place the stuffed bell pepper in a baking dish and cover with foil. Bake in the preheated oven for 20 minutes, then remove the foil and bake an additional 5 minutes or until the cheese is melted and slightly golden on top.
