INGREDIENTS
1 medium head Cauliflower (800g)
1.5 cups cooked Elbow Macaroni (210g)
1 cup shredded low fat Cheddar Cheese (113g)
2 cups low-fat Cottage Cheese (450g)
1 large Egg
1/2 cup Whole Wheat Panko Breadcrumbs (30g)
1 tsp Garlic Powder
1 tsp Smoked Paprika
Salt and Black Pepper to taste
Olive Oil Cooking Spray
PREPARATION
Preheat your oven to 425°F and line a baking sheet with parchment paper. Lightly spray the sheet with olive oil cooking spray.
Cut the cauliflower into bite-sized florets and steam or microwave them until just tender, about 4-5 minutes. Allow cooling slightly.
In a large bowl, combine the cooked cauliflower, 1.5 cups of cooked elbow macaroni, shredded cheddar cheese, and cottage cheese. Crack in the egg and add garlic powder, smoked paprika, salt, and pepper. Mix until well combined.
Using a spoon or your hands, form the mixture into small, compact bite-sized rounds or patties and then roll lightly in whole wheat panko breadcrumbs.
Place the bites on the prepared baking sheet and lightly spray or drizzle a small amount of olive oil on top to help crisp the coating.
Bake in the preheated oven for 20-25 minutes or until the bites are golden brown and set. Optionally, broil for an additional 1-2 minutes for extra crispiness, watching carefully.
Remove from the oven and let cool slightly before serving.
