2 Egg Whites
¼ cup diced Bell Pepper
¼ cup diced Onion
1 clove Garlic
1 tsp Olive Oil
1 oz Turkey Sausage
PREPARATION
Preheat your oven to 400°F.
Dice the sweet potato into small cubes. Toss them in olive oil, salt, and pepper, then spread on a baking sheet.
Roast the sweet potato cubes in the oven for about 20-25 minutes, until tender and slightly crisp.
While the sweet potato is roasting, heat a pan over medium heat and cook the bacon until crispy. Remove and set aside, reserving a bit of the bacon fat.
In the same pan, sauté the diced onion, bell pepper, and minced garlic until softened, about 3-4 minutes.
