INGREDIENTS
6 oz Chicken Breast
1 tbsp Buffalo Sauce
1 Whole Grain Burger Bun
2 leaves Iceberg Lettuce
1 cup Shredded Green Cabbage
1 stalk Celery
1 tbsp Nonfat Greek Yogurt
1 tsp Blue Cheese Crumbles
Spices (Garlic Powder, Salt, Pepper) to taste
PREPARATION
Preheat the grill to medium-high heat.
Season the 6 oz chicken breast with garlic powder, salt, and pepper. Brush it with 1 tablespoon of buffalo sauce.
Grill the chicken breast for about 6-7 minutes per side, until fully cooked and internal temperature reaches 165°F.
While the chicken is grilling, prepare the blue cheese slaw by combining shredded green cabbage and finely chopped celery in a bowl.
In a small bowl, mix together 1 tablespoon of nonfat Greek yogurt and 1 teaspoon of blue cheese crumbles. Add a pinch of salt and pepper, then drizzle over the cabbage mixture. Toss until well coated.
Lightly toast the whole grain burger bun on the grill if desired and place 2 leaves of iceberg lettuce on the bottom bun.
Slice the grilled chicken breast and place it on the lettuce, drizzle any remaining buffalo sauce, and top with a generous serving of the creamy blue cheese slaw.
Finish by capping with the top bun and serve immediately.
