Pan-Seared Garlic Shrimp with Roasted Broccoli
Enjoy a vibrant plate of succulent garlic shrimp, pan-seared to perfection and paired with perfectly roasted broccoli. The bright flavors of garlic and a splash of olive oil enhance the natural sweetness of the shrimp, while the roasted broccoli adds a satisfying crunch.
INGREDIENTS
6 oz Shrimp
1.5 cups chopped Broccoli
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
1/4 tsp Salt
1/4 tsp Black Pepper
PREPARATION
Preheat your oven to 425°F. On a baking sheet, toss the chopped broccoli with half of the olive oil, salt, and black pepper.
Roast the broccoli in the oven for about 15-20 minutes until tender and slightly charred on the edges.
While the broccoli roasts, peel and devein the shrimp if not already done, and pat them dry with paper towels.
Mince the garlic cloves. In a skillet, heat the remaining olive oil over medium-high heat.
Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.
Add the shrimp to the skillet in a single layer. Season with a pinch of salt and pepper, and cook for about 2 minutes on each side until the shrimp turn pink and opaque.
Once the shrimp are cooked and the broccoli is roasted, plate them together. Optionally, squeeze a bit of lemon over the shrimp for extra brightness if desired.
