PREPARATION
Preheat your oven to 400°F (200°C).
Wash and dice the red potato into small cubes, slice the red bell pepper and quarter the yellow onion.
In a bowl, toss the diced potato, bell pepper, and onion with olive oil, garlic powder, salt, and pepper.
Spread the vegetables evenly on a baking sheet and roast in the oven for about 20 minutes, until they begin to soften and develop some color.
