PREPARATION
Preheat your oven to 425°F (220°C). Peel and cube the sweet potato into bite-sized pieces.
Toss the sweet potato cubes with 1 tablespoon of avocado oil and a pinch of salt and pepper. Spread them on a baking sheet and roast in the oven for about 20-25 minutes until tender and lightly browned.
While the sweet potatoes are roasting, heat a non-stick skillet over medium heat and add the turkey sausage slices. Sauté them for 2-3 minutes until slightly browned.
