INGREDIENTS
6 oz Salmon Fillet (170g)
1 cup Fresh Green Beans (125g)
1 cup Cauliflower florets (107g)
1 clove Garlic
2 tsp Extra Virgin Olive Oil
Salt and Pepper to taste
1 Lemon Wedge for garnish
PREPARATION
Pat the salmon dry with a paper towel and season with salt and pepper.
Heat 1 tsp of extra virgin olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon, skin side down if applicable, and sear for about 3-4 minutes per side until cooked through and nicely browned.
Meanwhile, steam the green beans in a steamer or microwave until tender-crisp, approximately 4-5 minutes.
For the garlic cauliflower mash, steam the cauliflower florets along with the garlic clove until soft, about 8-10 minutes. Transfer to a bowl and mash until smooth using a fork or immersion blender. Drizzle in the remaining 1 tsp of olive oil and season with salt and pepper to taste.
Plate the seared salmon alongside the steamed green beans and a serving of garlic cauliflower mash. Garnish the salmon with a lemon wedge.
Serve immediately and enjoy your clean and balanced dinner.
