PREPARATION
Preheat the oven to 400°F (200°C) for roasting the broccoli.
Press the tofu between paper towels or a clean cloth to remove excess moisture. Cut the tofu into cubes.
In a bowl, gently toss the tofu cubes with the cornstarch, a pinch of salt, and pepper until evenly coated.
Heat olive oil in a non-stick skillet over medium-high heat. Fry the tofu cubes until each side is golden and crispy, about 2-3 minutes per side. Set aside.
