Preheat your oven to 400°F (200°C). Lightly line a baking sheet with parchment paper.
In a bowl, combine the lean ground turkey, a pinch of salt, pepper, and garlic powder. Mix gently to form a patty.
Form the turkey mixture into a 4 oz patty and set aside.
For the mozzarella sticks, carefully cut the mozzarella stick in half lengthwise for two slimmer pieces.
In a shallow bowl, whisk the egg white. In another, place the whole-grain breadcrumbs.
Dip each mozzarella piece first into the egg white, then coat with breadcrumbs. Place them on the prepared baking sheet.
Bake the mozzarella sticks in the oven for about 8-10 minutes, or until the coating is golden and the cheese is softened (but not melted completely).
While the cheese is baking, cook the turkey patty in a non-stick skillet over medium heat for about 4-5 minutes on each side or until the internal temperature reaches 165°F (74°C).
Assemble the turkey burger by placing the cooked patty on the whole wheat bun, and topping it with lettuce and tomato slices.
Serve the burger alongside the crispy baked mozzarella sticks, and enjoy!
