INGREDIENTS
1 large potato (200g)
1 cup frozen peas (160g)
1/3 cup chickpea flour (40g)
1 egg
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp turmeric powder
1/2 cup fresh cilantro
1/2 cup fresh mint
1 green chili
1/2 cup non-fat Greek yogurt
1 tbsp lemon juice
1 tsp grated fresh ginger
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
In a large bowl, peel and roughly mash the potato. Add the frozen peas (thawed), chickpea flour, and egg.
Stir in the ground cumin, ground coriander, turmeric, salt, and pepper. Mix until well combined.
Form the mixture into 4 even patties and place them on the prepared baking sheet.
Bake the patties for 20-25 minutes, flipping halfway to ensure even crisping, until edges are golden and patties are firm.
While the patties are baking, prepare the chutney. In a blender or food processor, combine the fresh cilantro, fresh mint, green chili, non-fat Greek yogurt, lemon juice, and grated ginger. Blend until smooth. Adjust salt and pepper to taste.
Serve the warm patties topped with a generous drizzle of the fresh cilantro-mint chutney.
