INGREDIENTS
2 sheets Phyllo Dough
200g Fresh Spinach
50g Feta Cheese, crumbled
3 Eggs
1/4 small Onion, diced
1 clove Garlic, minced
1/2 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Lightly brush a baking dish with olive oil.
In a skillet over medium heat, add olive oil and sauté the diced onion until softened. Add the minced garlic and cook for another minute.
Add the fresh spinach to the skillet and cook until wilted and most of the moisture has evaporated. Season with a pinch of salt and pepper.
In a bowl, whisk the eggs and combine with the crumbled feta cheese. Stir in the sautéed spinach mixture.
Lay out the phyllo sheets on a clean work surface. Place one sheet in the baking dish, pressing it to cover the bottom. Repeat with the second sheet.
Pour the spinach, feta, and egg mixture over the layered phyllo, ensuring even distribution.
Bake in the preheated oven for about 20-25 minutes, or until the eggs are set and the phyllo turns a light golden crisp.
Allow to cool slightly before slicing into portions and serve.
