PREPARATION
Preheat your oven to 400°F.
Peel (if preferred) and dice the sweet potato into small, even cubes. Place the cubes on a baking tray, drizzle with half a teaspoon of olive oil, and season with a pinch of salt and pepper.
Roast the sweet potato in the oven for about 20-25 minutes until tender and lightly caramelized.
While the sweet potato is roasting, finely dice the red bell pepper and yellow onion.
