INGREDIENTS
6 oz Chicken Breast (~170g)
0.5 cup Shredded Mozzarella Cheese (~56g)
1 medium Fresh Tomato (~123g)
2 tbsp Fresh Basil (chopped)
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the chicken breast dry and season generously with salt and pepper on both sides.
In a skillet, heat 1 teaspoon of olive oil over medium-high heat until shimmering.
Place the chicken breast in the skillet and cook for about 5-6 minutes per side, or until the exterior is crispy and the internal temperature reaches 165°F.
While the chicken finishes cooking, slice the fresh tomato and chop the basil.
Once the chicken is nearly done, lower the heat to medium-low, sprinkle the shredded mozzarella over the top of the chicken, and cover the skillet briefly to allow the cheese to melt.
Plate the chicken and top with fresh tomato slices and chopped basil. Add an extra pinch of salt and pepper if desired before serving.
