INGREDIENTS
6 oz Chicken Breast
1/4 cup Panko Breadcrumbs
1/3 cup Orange Juice
1 tbsp Low Sodium Soy Sauce
1 tsp Honey
1 tsp Fresh Ginger, grated
1 clove Garlic, minced
1 cup Green Beans
1/2 tbsp Olive Oil
1/2 tsp Cornstarch
Pinch of Red Pepper Flakes
PREPARATION
Preheat the oven to 425°F and line a baking sheet with parchment paper.
Slice the chicken breast into bite-sized pieces or strips. In a shallow bowl, coat the chicken pieces lightly with the panko breadcrumbs.
Place the breaded chicken pieces on one side of the baking sheet.
In a small saucepan over medium heat, combine the orange juice, low sodium soy sauce, honey, grated ginger, minced garlic, cornstarch (dissolved in a little water), and red pepper flakes. Stir continuously until the sauce thickens slightly, about 3-4 minutes.
Drizzle a small amount of the orange sauce over the chicken pieces, reserving some sauce for serving.
On the other side of the baking sheet, arrange the green beans. Drizzle the olive oil over them and toss lightly to coat.
Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the chicken is cooked through and the green beans are tender with slight crisp edges.
Remove from the oven and toss the chicken with any remaining orange sauce. Serve the crispy orange chicken alongside the roasted green beans.
