INGREDIENTS
6 oz Lean Ground Turkey
1 large Bell Pepper
0.33 cup cooked Brown Rice
0.25 cup Diced Tomatoes
0.25 medium Onion
1 clove Garlic
1 tsp Olive Oil
1 tsp Chili Powder
Salt and Pepper to taste
PREPARATION
Preheat the oven to 375°F (190°C). Prepare a baking dish by lightly oiling it.
Slice the top off the bell pepper and remove the seeds and membranes. Set aside.
Heat olive oil in a skillet over medium heat. Sauté the chopped onion and minced garlic until translucent and fragrant.
Add the lean ground turkey to the skillet. Cook until browned, breaking it apart as it cooks.
Stir in the cooked brown rice, diced tomatoes, and chili powder. Season with salt and pepper to taste. Let the mixture heat through for an additional 2-3 minutes.
Fill the hollowed bell pepper with the turkey and rice mixture. Place the stuffed pepper in the prepared baking dish.
Cover the dish lightly with foil and bake in the preheated oven for 25-30 minutes, until the pepper is tender.
Remove from oven and let cool slightly before serving.
