Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Enjoy a beautifully balanced dinner featuring a perfectly seared salmon fillet paired with crisp, steamed green beans and a creamy garlic-infused mashed cauliflower blend enriched with a touch of Greek yogurt and olive oil.
INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
2 cups Cauliflower Florets
1 clove Garlic
2 tbsp Non-Fat Greek Yogurt
1 mix serving Olive Oil (approx 1 tbsp + 1 tsp)
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add a portion of the olive oil. Once shimmering, place the salmon skin-side down and sear for about 4 minutes until the skin is crispy.
Flip the salmon and cook for an additional 3-4 minutes for medium doneness, then transfer to a plate.
Meanwhile, steam the green beans in a steamer basket over simmering water for about 5 minutes until tender yet crisp.
In a small pot, bring cauliflower florets and a small splash of water to a boil. Add minced garlic and cook until the cauliflower is soft, about 7-8 minutes.
Drain the cauliflower and garlic, then mash them with the Greek yogurt and remaining olive oil. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed green beans and a generous serving of garlic mashed cauliflower. Serve warm.
