INGREDIENTS
5 oz Salmon Fillet
1 bunch (6 spears) Asparagus
1 tsp Olive Oil
Juice of 1/2 Lemon
2 tbsp Fresh Herbs (parsley and dill)
1 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Pat the salmon dry with paper towels and season both sides with salt, pepper, and garlic powder.
Preheat a non-stick skillet over medium-high heat and add olive oil.
Place the salmon fillet skin-side down in the skillet and sear for about 3-4 minutes until the skin is crisp. Flip the salmon and cook an additional 3-4 minutes until done to your preference.
While the salmon is cooking, preheat your oven to 400°F. Toss the asparagus with a drizzle of olive oil, salt, pepper, and the juice of 1/2 lemon.
Lay the asparagus on a baking sheet in a single layer and roast in the oven for 8-10 minutes until tender and slightly caramelized.
Plate the salmon and arrange the roasted asparagus alongside. Garnish with freshly chopped herbs and an extra squeeze of lemon if desired.
