INGREDIENTS
6 ounces Cod Fillet
1/4 cup dry Orzo Pasta
2 tablespoons Nonfat Greek Yogurt
1 teaspoon Olive Oil
1/2 medium Lemon
2 tablespoons Fresh Herbs (Parsley & Dill)
Salt & Pepper to taste
PREPARATION
Bring a small pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
While the orzo cooks, pat the cod fillet dry with a paper towel and season lightly with salt and pepper on both sides.
Heat the olive oil in a non-stick skillet over medium-high heat. Once hot, add the cod fillet and sear for about 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork.
In a small bowl, mix the nonfat Greek yogurt with the juice and zest of the lemon, and add in the chopped fresh herbs. Stir until well combined.
Gently toss the cooked orzo with the lemon herb yogurt sauce until well coated.
Plate the orzo as a base and top with the pan-seared cod. Garnish with additional lemon zest or herbs if desired, and serve immediately.
