150 g Turkey Breast (skinless)
1 cup chopped Cauliflower
1 cup fresh Spinach
1 tbsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Preheat the oven to 425°F (220°C).
In a bowl, toss the chopped cauliflower with half of the olive oil, minced garlic, salt, and pepper.
Spread the cauliflower on a baking sheet and roast for 20-25 minutes until tender and slightly browned.
While the cauliflower roasts, pat the turkey breast dry and season both sides with salt and pepper.
Heat the remaining olive oil in a skillet over medium-high heat and sear the turkey breast for about 3-4 minutes per side until fully cooked and nicely browned.
In the last minute of cooking, add the fresh spinach to the skillet to lightly wilt.
