INGREDIENTS
4 oz Lean Ground Beef (113g)
1 large Egg (50g)
1 medium Sweet Potato (130g)
1/2 cup diced Red Bell Pepper (46g)
1/4 medium Yellow Onion (40g)
1 cup Fresh Spinach (30g)
1 tsp Olive Oil (4.5g)
Salt & Pepper to taste
PREPARATION
Dice the sweet potato into small cubes, and chop the red bell pepper and onion.
Heat a skillet over medium heat and add the olive oil.
Sauté the chopped onion and red bell pepper until softened, about 3-4 minutes.
Add the ground beef to the skillet, breaking it up into small pieces, and cook until browned and cooked through.
Mix in the diced sweet potato and continue cooking until the sweet potato is tender, about 8-10 minutes. Stir occasionally.
Season with salt and pepper, and toss in the fresh spinach until just wilted.
In a separate pan, cook the egg to your liking (sunny side up or over easy works best).
Plate the hash and top with the cooked egg. Serve warm.
