INGREDIENTS
3 egg whites (approx 99g)
1 whole egg (approx 50g)
1 turkey sausage link (approx 60g)
1/8 cup shredded part-skim mozzarella (approx 28g)
1 cup raw spinach (approx 30g)
1.5 tbsp olive oil (approx 20g)
1 slice whole wheat bread (approx 30g)
PREPARATION
Crack the whole egg and separate the egg whites into a bowl, then add the additional egg whites.
Whisk the eggs together until well combined.
Heat a non-stick skillet over medium heat and add the olive oil.
Sauté the spinach in the olive oil for about 1-2 minutes until just wilted; remove and set aside.
In the same skillet, add the turkey sausage link and lightly brown it on all sides for about 3-4 minutes. Slice it if desired.
Pour the egg mixture into the skillet and let it cook for a minute before stirring gently.
Add in the sautéed spinach and sprinkle the shredded mozzarella over the eggs.
Cook the scramble for another 2-3 minutes until the eggs are set and the cheese has slightly melted.
Toast the whole wheat bread until golden brown.
Serve the egg scramble alongside the toast and enjoy your balanced, protein-rich breakfast.
