Seared Salmon with Steamed Broccoli and Garlic Cauliflower Mash
Enjoy a nutrient-dense dinner of perfectly seared salmon paired with tender steamed broccoli and a creamy garlic cauliflower mash enriched with a dollop of nonfat Greek yogurt. This balanced dish brings together savory and fresh flavors, making it a light yet satisfying meal.
INGREDIENTS
6 ounces Salmon Fillet
1 cup Broccoli, chopped
1 cup Cauliflower, chopped
1/4 cup Nonfat Greek Yogurt
1 clove Garlic
1 tablespoon Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet and sear for about 4 minutes per side or until cooked through with a nicely browned crust.
While the salmon is searing, steam the broccoli in a steamer basket over boiling water for about 4-5 minutes until tender but still bright green.
For the cauliflower mash, steam the cauliflower florets (and garlic clove) until very tender, about 8-10 minutes.
Transfer the steamed cauliflower and garlic into a blender or food processor, add the nonfat Greek yogurt, lemon juice, salt, and pepper. Blend until smooth and creamy.
Plate the seared salmon alongside the steamed broccoli and a generous scoop of garlic cauliflower mash. Serve warm and enjoy.
