INGREDIENTS
6 oz Chicken Breast (~170g)
1.5 cups Broccoli Florets (~136g)
0.5 cup Cooked Quinoa (~93g)
1 tbsp Tamari Sauce (16g)
1 tsp Honey (7g)
1 clove Garlic (3g)
1 tsp Fresh Ginger (2g)
PREPARATION
Preheat your oven to 425°F.
In a small bowl, combine tamari sauce, honey, minced garlic, and grated ginger to create the glaze.
Place the chicken breast in a shallow dish and pour half of the tamari glaze over it. Let it marinate for at least 15 minutes.
While marinating, toss the broccoli florets with a drizzle of olive oil, salt, and pepper. Spread them out on a baking sheet.
Roast the broccoli in the preheated oven for about 15-20 minutes until tender and slightly charred.
Heat a skillet over medium-high heat. Sear the marinated chicken for about 5-6 minutes per side or until the chicken is fully cooked and has a nice caramelized exterior. Brush with the remaining glaze during cooking.
At the same time, if not pre-cooked, prepare quinoa according to package instructions until fluffy.
Plate the chicken breast alongside the roasted broccoli and a serving of quinoa. Drizzle any remaining glaze over the top if desired, and serve warm.
