Enjoy a savory, hearty hash featuring crispy sweet potato cubes, flavorful lean turkey sausage, and perfectly cooked sunny-side up eggs. This dish balances sweet and savory notes, accented by the slight crunch of red bell pepper and caramelized red onions, making it a versatile meal for any time of day.
INGREDIENTS
1/2 medium Sweet Potato (130g diced)
3 links Lean Turkey Sausage (approx. 60g each)
2 Large Eggs
1/2 medium Red Bell Pepper (75g diced)
1/4 small Red Onion (30g, thinly sliced)
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium heat and add the olive oil.
Peel (if preferred) and dice the sweet potato into small cubes. Dice the red bell pepper and thinly slice the red onion.
Add the sweet potato cubes to the skillet and cook for about 5-7 minutes until they start to soften and turn lightly crispy, stirring occasionally.
Add the red onion and red bell pepper to the skillet. Continue to sauté for about 3-4 minutes until the onions become translucent and the bell peppers soften.
Slice the lean turkey sausage links into bite-sized pieces and add to the skillet. Cook for an additional 3-4 minutes until the sausage pieces are heated through and start to brown slightly.
Season the hash with salt and pepper to taste.
In a separate non-stick small pan, cook the eggs sunny-side up until the whites are set but the yolks remain runny, about 2-3 minutes, or to your preferred doneness.
Plate the hash and top with the sunny-side up eggs. Optionally, garnish with fresh herbs if desired and serve immediately.
