INGREDIENTS
3 oz Chicken Breast
1 cup cooked Whole Wheat Pasta
1/4 cup Nonfat Greek Yogurt
1 cup Fresh Spinach
1 tsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
Salt & Black Pepper to taste
PREPARATION
Season the chicken breast with salt and black pepper. Preheat a grill pan or skillet over medium heat and add the teaspoon of olive oil.
Sear the chicken for about 4-5 minutes per side until cooked through and lightly charred. Remove from heat and let it rest before slicing into strips.
In a small saucepan, lightly sauté the minced garlic in a tiny drizzle of olive oil until fragrant, being careful not to burn.
Add the nonfat Greek yogurt and lemon juice to the saucepan with garlic, stirring to combine and warm gently, creating a light creamy sauce. Adjust seasoning with salt and pepper.
In a separate pot, prepare whole wheat pasta according to package instructions until al dente. Drain and reserve a small splash of pasta water.
Combine the cooked pasta with fresh spinach in a large mixing bowl. Drizzle the warm yogurt sauce over the pasta and spinach, tossing to coat evenly. If needed, add a little pasta water for desired consistency.
Top the pasta with sliced grilled chicken. Serve warm and enjoy a healthy, protein-packed meal.
