Savor a perfectly seared salmon fillet paired with vibrant garlic-infused green beans and a creamy cauliflower mash drizzled with olive oil. This dish delivers a delightful balance of flavors and textures, making it a wholesome and satisfying dinner option.
INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 tsp Extra Virgin Olive Oil (for green beans)
1 cup Cauliflower
1 tbsp Extra Virgin Olive Oil (for mash)
2 Garlic Cloves
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add the salmon fillet skin-side down and sear for about 3-4 minutes per side or until cooked to your desired doneness. Remove and set aside.
In the same skillet, add 1 teaspoon of olive oil along with 1 minced garlic clove. Sauté for about 30 seconds.
Add the green beans to the skillet, tossing them with the garlic. Sauté for about 4-5 minutes until they are tender-crisp. Season with salt and pepper and remove from heat.
Meanwhile, steam the cauliflower florets (or use the cauliflower from 1 cup, chopped) along with the remaining garlic cloves until very tender, about 8-10 minutes.
Transfer the steamed cauliflower and garlic into a blender or use a potato masher. Add 1 tablespoon of olive oil and a pinch of salt, then blend or mash until smooth and creamy.
Plate the dish by serving the seared salmon alongside the garlic green beans and a generous portion of cauliflower mash.
