INGREDIENTS
5 oz Salmon Fillet
1/4 cup Unsalted Pistachios, crushed
1 cup Asparagus
1 tsp Olive Oil
1/4 cup Nonfat Greek Yogurt
1 tbsp Lemon Juice
1 tbsp Fresh Dill
Salt and Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Place the asparagus on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 12-15 minutes until tender.
Meanwhile, finely crush the pistachios on a plate. Season the salmon fillet with salt and pepper, then press the crushed pistachios onto the top of the fillet to form a crust.
Heat a nonstick skillet over medium-high heat. Sear the salmon, pistachio side down first, for about 2-3 minutes until the crust is golden. Carefully flip and cook the other side for 3-4 minutes, or until the salmon reaches your desired doneness.
In a small bowl, combine the Greek yogurt, lemon juice, and chopped fresh dill. Mix well to make the lemon dill sauce.
Plate the salmon alongside the roasted asparagus and drizzle the lemon dill sauce over the top. Serve immediately.
