A delightful dinner featuring a perfectly seared salmon fillet served alongside garlicky green beans and tender brown rice. The dish offers layers of umami, fresh citrus brightness, and a satisfying textural mix, making it a well-balanced, clean meal to support your active lifestyle.
INGREDIENTS
6.5 oz Salmon Fillet (~184g)
1/3 cup cooked Brown Rice (~65g)
1 cup Green Beans (~125g)
1 clove Garlic, minced
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel. Season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon carefully and sear the other side for an additional 3-4 minutes until the fish is just cooked through. Remove from the pan and set aside.
In the same skillet, add the minced garlic and let it lightly toast for about 30 seconds to a minute until fragrant.
Add the green beans to the skillet and sauté with garlic for about 4-5 minutes until they are tender yet still crisp. Season with a pinch of salt and pepper.
Warm the pre-cooked brown rice either in the microwave or in a separate pan. If reheating in a pan, stir occasionally until warmed through.
Plate the rice first, then arrange the garlic green beans alongside. Place the seared salmon on top or beside, and finish with a drizzle of fresh lemon juice over the salmon for a bright finish.
