Savor the rich flavors of a perfectly pan-seared salmon fillet complemented by garlicky sautéed spinach and a comforting side of nutty brown rice. This dish balances a robust protein punch with vibrant greens, all brought together in a delicious and satisfying plate.
INGREDIENTS
8 oz Salmon Fillet
2 cups Fresh Spinach
1/2 cup Brown Rice, Cooked
1 tsp Olive Oil (for salmon)
1 tsp Olive Oil (for spinach)
1 Garlic Clove
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat a non-stick skillet over medium-high heat.
Pat the salmon fillet dry and season both sides with a pinch of salt and black pepper.
Add 1 teaspoon of olive oil to the skillet and allow it to heat up. Once hot, place the salmon skin-side down (if applicable) and sear for about 4-5 minutes until a golden crust forms.
Flip the salmon and cook for an additional 3-4 minutes until the fish is just cooked through. Remove the salmon from the skillet and set aside.
In the same skillet, add the remaining 1 teaspoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant.
Add the spinach to the skillet and cook, stirring frequently, for 2-3 minutes until it wilts but still retains a bright green color.
While preparing the spinach, heat the pre-cooked brown rice if necessary.
Plate the brown rice as a base, then top with the garlicky spinach. Place the pan-seared salmon on top or alongside, and serve immediately.
