Seared Salmon with Garlic Green Beans and Cauliflower Mash
Savor the vibrant flavors of juicy seared salmon paired with crisp garlic-infused green beans and a silky cauliflower mash. This dish balances tender fish with fresh, garden-picked vegetables for a satisfying and nutrient-rich dinner.
INGREDIENTS
6.5 ounces Salmon Fillet
1 cup Green Beans
1 teaspoon Extra Virgin Olive Oil (for green beans)
1 cup Cauliflower
2 teaspoons Extra Virgin Olive Oil (for mash)
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat. Sear the salmon for about 3-4 minutes per side until it develops a nice crust and is cooked to your desired doneness. Remove and set aside.
In the same skillet, add 1 teaspoon of olive oil. Sauté minced garlic for about 30 seconds until fragrant, then add the green beans. Cook for 4-5 minutes until the green beans are tender-crisp. Season with salt and pepper.
Meanwhile, steam or boil the cauliflower until very tender (about 8-10 minutes). Drain well.
Place the cooked cauliflower in a blender or food processor. Add 2 teaspoons of olive oil and a pinch of salt and blend until smooth to create a creamy mash.
Plate the seared salmon alongside a generous serving of garlic green beans and cauliflower mash. Enjoy warm.
