Crispy Sweet Potato Hash with Fried Eggs
Enjoy a hearty bowl of crispy sweet potato hash crowned with perfectly fried eggs. This versatile dish blends the natural sweetness of roasted potatoes with colorful bell peppers and onions, all elevated by a drizzle of olive oil for extra crispiness. The rich, protein-packed eggs provide a satisfying finish, making this meal great for any time of day.
INGREDIENTS
1 medium Sweet Potato
1/2 Red Bell Pepper
1/4 Yellow Onion
1 teaspoon Extra Virgin Olive Oil
3 Large Eggs
1 cup Fresh Spinach
Salt and Black Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Finely chop the red bell pepper and yellow onion.
In a medium skillet, heat the olive oil over medium heat. Add the diced sweet potato and sauté for about 5 minutes.
Add the chopped bell pepper and onion to the skillet. Season lightly with salt and pepper, and continue cooking until the sweet potatoes are tender and slightly crispy, about 7-10 minutes.
During the last few minutes, add the fresh spinach to the skillet and stir until just wilted.
In a separate non-stick pan, fry the eggs to your preference (sunny side up or over-easy). Season with a pinch of salt and pepper.
Once the hash is ready, transfer it to a plate and top with the fried eggs. Enjoy warm.
