Seared Salmon with Steamed Asparagus and Cauliflower Mash
Enjoy a beautifully seared salmon paired with tender steamed asparagus and a velvety cauliflower mash enriched with a touch of Greek yogurt and olive oil. This plate brings forward a balance of flavors and textures that are both satisfying and nutritious.
INGREDIENTS
6 oz Salmon Fillet
6 Asparagus Spears
150 g Cauliflower
1/4 cup Plain Nonfat Greek Yogurt
1 tsp Extra Virgin Olive Oil
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon and sear for about 3-4 minutes per side until a golden crust forms and the fish is cooked through.
While the salmon is searing, steam the asparagus in a steamer or over a pot of boiling water for 4-5 minutes until tender yet crisp.
For the cauliflower mash, steam the cauliflower florets until soft, about 8-10 minutes. Transfer to a bowl and mash with a fork or blend lightly until smooth.
Mix in the Greek yogurt and olive oil to the mashed cauliflower, and season to taste with salt and pepper.
Plate the seared salmon alongside a serving of steamed asparagus and a generous scoop of cauliflower mash. Serve warm.
