INGREDIENTS
350g extra-firm tofu
1 medium red onion
1 tbsp olive oil
2 tbsp nutritional yeast
1 tbsp cornstarch
1 tsp smoked paprika
1 tsp garlic powder
Salt and black pepper to taste
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture. Once pressed, cut into bite-sized cubes.
In a bowl, toss the tofu cubes with cornstarch, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
Preheat your oven to 400°F (200°C). Slice the red onion into thick wedges and toss with a drizzle of olive oil, salt, and pepper.
Spread the red onion evenly on a baking sheet and roast in the oven for about 20 minutes, or until they become tender and slightly caramelized.
Heat a non-stick skillet over medium-high heat and add 1/2 tablespoon of olive oil. Add the seasoned tofu cubes and fry until all sides become golden and crispy, about 8-10 minutes. Add additional oil if needed.
Once the tofu is crispy and the onions are roasted, combine them in a serving bowl. Sprinkle with nutritional yeast and toss gently to coat evenly.
Serve warm and enjoy your nutritious and delicious meal.
