Enjoy a light yet satisfying dinner featuring perfectly seared salmon, crisp steamed green beans, and creamy garlic mashed potatoes. This culinary trio blends tender, flavorful fish with garden-fresh veggies and comfort food with a gourmet twist.
INGREDIENTS
5 oz Salmon Fillet
1 tsp Extra Virgin Olive Oil
1 cup Green Beans
1/2 cup Potatoes
1 Garlic Clove
2 tbsp Unsweetened Almond Milk
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat. Once hot, sear the salmon skin-side down for about 3-4 minutes until crisp. Flip and cook for another 3-4 minutes until the fish is cooked through.
Meanwhile, steam the green beans until tender-crisp, about 5 minutes.
Boil peeled potatoes in lightly salted water until fork-tender, about 10-12 minutes. Drain the potatoes.
Mash the potatoes with a garlic clove (minced) and almond milk until smooth and creamy. Season with salt and pepper to taste.
Plate the seared salmon, arrange the steamed green beans on the side, and add a serving of garlic mashed potatoes. Serve warm.
